
Copycat KFC Coleslaw
Finely chopped cabbage in a sweet, tangy, creamy dressing, just like the little tub from KFC. Chill it for a couple of hours and the flavors really come together.

Cut the cabbage into chunks. Pulse in a food processor in small batches, 6 to 8 quick pulses, until finely minced into pieces about 1/4 inch. Do not turn it to mush.

Pulse the carrot in the processor until finely minced and combine with the cabbage in a large bowl.

Whisk the mayonnaise, buttermilk, sugar, lemon juice, vinegar, salt, and pepper until the sugar dissolves and the dressing is smooth.

Pour the dressing over the cabbage and toss until evenly coated.

Cover and refrigerate for at least 2 hours, stirring once, so the cabbage softens and the flavors blend.

Stir again and taste. Add a pinch of salt or a little more sugar if needed, then serve cold.
👨🍳 Chef Notes & Tips
The very fine chop is what makes this taste like KFC's slaw rather than a standard coleslaw. If your cabbage releases a lot of water while chilling, drain it before serving. It keeps 4 days in the fridge, and tastes best on day 2. If you do not have buttermilk, mix 1/4 cup milk with 1 tsp lemon juice and let it sit 5 minutes.
