    In a medium mixing bowl, beat softened cream cheese, powdered sugar, and vanilla extract with a hand mixer until light and fluffy, about 2 minutes.

    Gently fold in 1/4 cup of the powdered freeze-dried strawberries until a pretty pink swirl forms. Cover and chill in freezer for 20 minutes to firm up.

    In a shallow dish, combine graham cracker crumbs, melted butter, and remaining freeze-dried strawberry powder.

    Using a small 1-tablespoon cookie scoop, portion the cream cheese mixture and roll between clean hands into smooth balls.

    Roll each ball generously in the graham cracker crumb mixture until fully coated. Arrange on a parchment-lined baking sheet.
