    Blend on high speed for 30 to 45 seconds until completely smooth and batter-like. Let batter sit for 2 minutes to thicken slightly.

    Heat a non-stick skillet or griddle over medium-low heat and grease lightly with butter or coconut oil.

    Pour 3 tablespoons of batter per pancake onto the skillet.
